Easy Meal: Chicken Noodle Soup

Ever since I last posted about bouillon, I was trying to think of a good recipe that uses it. The first thing that came to mind was my recipe for chicken noodle soup. It is really easy and really quick to make. It is also really cheap. All the ingredients listed here should cost you less than $20 at Walmart, Target, etc.


Things you'll need:


1 large pot w/lid (large enough to hold 9 cups of water with room to spare)
1 medium-sized pot
1 strainer
1 large wooden or Teflon  spoon
1 measuring cup
1 large knife
1 cutting board
1 can opener

Ingredients:


1 13oz. can chicken breast
1 tablespoon butter or olive oil
1 lb. noodles (Just use what you have on hand. I have used penne, spaghetti, even white rice)
1/2  cup chopped onion
1/2 cup chopped celery
9 cups chicken broth (if using bouillon: 9 tsp chicken bouillon with 9 cups water)
1 cup sliced carrots
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. celery salt
3 tsp. minced garlic
salt and pepper

Step 1:
Make sure you have chopped your onions and celery and are ready to use them.

Step 2:
Heat the large pot on the stove over medium-low heat. If you are not using butter, add olive oil. Immediately add the celery and onions.

Step 3:
Saute the celery and onions in the pot until they are tender - this should take about 5 minutes. Stir occasionally.

Step 4:
Pour in the chicken broth and add the rest of the ingredients to the pot except for the noodles.

Step 5:
Bring the soup to a boil and then reduce it to a simmer and cover it. It needs to simmer for at least 20 minutes.

Step 6:
Using the medium-sized pot, boil enough water so that you can cook your pasta.

Step 7:
Boil the pasta, strain it and set it aside.


Note: The reason that I boil the pasta and keep it separate is so the noodles don't soak up all the broth in the soup.

Step 8:
Once the soup has simmered long enough you can serve your soup. Just spoon some of the noodles into a bowl and then ladle some soup on top.

I make large amounts of this soup because I like to freeze it so I have some on hand. If this makes too much soup for you, just adjust it based on how many people you need to cook for. If you cut the recipe in half, it should make enough soup for 4 people.

When storing left over soup, I use separate containers for the soup and the noodles.
